An admin user can export a Data Dictionary. This is a list of all data models and fields in a given ONE Platform solution.
Does the Data Dictionary include Module Defined Fields? If not, is there another way to export those?

They are included. On the Model Fields page, they will be listed under the model level on which you added them. So if you added them to Item, you should check for model level Item and your field should be listed.
